Slice this mushroom and rosemary pie in small squares to serve on tapas plates.
The recipe is very simple: Precook Yukon Gold potatoes. Slice one per person, layering them on a 10" plate. Drizzle with olive oil, add chopped mushrooms and serrano ham if you wish. Chop small bits of onion, rosemary and garlic to sprinkle over the tapas. Finish with 1/2 cup grated Manchego cheese. Broil or bake in a 450 degree oven for a few minutes until the top is just golden brown.
